 Street carburetor vs race carb.

What do the carb.company do to there street carb calibration over a race calibrated carb..Because when I look up the spec. on QF's carb chart there doesn't seem to be much difference.Does anybody know ,I have heard of guys taking there stock 69,70,71 780 vs carb and spending over 1000.00 bucks to have it set up for say a stock eliminator 428 Cj or 351cleveland Cj engine and the car would pick up et and mph.Whats the secret.

Thinner throttle plates, thinner shafts in some classes. And the QF carb bodies flow better than the Holley. I put together a SS/Comp legal 780 based on a QF body, dry flows around 1050 CFM...
